what CAN you cook? if you’ve never cooked Chinese food before don’t go learning something new just for this. cook whatever you’re comfortable with! most Chinese eat family style so i recommend serving that way.
another thing is in China it’s considered good etiquette to fill up your guests’ glasses and even to serve them food directly onto their plate.
also don’t be offended if they they their shoes off without asking first.

You probably don't need to make it very Chinese. In fact, unless you're familiar with Chinese cuisines, it's probably better not. I'm sure they'll appreciate the effort you put in. Some things to keep in mind:
have hot water or tea available (not necessarily waiting, but if they ask for it), many Chinese people don't drink cold water
don't be afraid to make more food than you expect to eat

Unless you are a good cook (of Chinese food specifically) I would either cater the event or hire a local Chinese cook to handle it. In China food is not treated the same way as it is in the US.

Why would the American host family do Chinese food at all? I cannot possible imagine going to any other country and expecting them to serve me American food.

Why would a Chinese want to eat Chinese food in the U.S.? Americanized Chinese food is very different from authentic Chinese and they can have it any day at home. When I visited the U.S. as a foreigner I never wanted to eat “my” food there, I wanted to try local, that’s the point of traveling.

I'm not sure they're looking for a faux-Chinese experience in the USA.

Get them the best pizza and fried chicken in town. Good party size sandwich from sandwich shop. I’m serious. You wanna see and eat authentic street foods in China, now do the reverse.
Shiranui42
This does not sound like “fancy dinner with boss” food. You do not serve street food to guests at a nice dinner party.
donuttrackme
Cook them American food. Not Chinese food. Unless you're an amazing Chinese chef.

When I lived in Hong Kong we entertained many times people from Mainland China. Whilst Chinese food was of course easily obtainable, I noticed that they loved buffets. Western dishes mixed with Chinese ones were very popular. It gives people a chance to choose and not being embarrassed when they do not like something. You do not have to go over the top. Just a sextion of simple dishes when you want to cook yourself or have it catered.

I think this is a great idea. Especially if you have an outside/outdoor area in your home... that would be something they'd likely really enjoy. Don't worry about etiquette, that kind of thing. You'll have a great time!!
ian_coke77
Don't over think it. There are many etiquette rules and conventions in China, but Chinese people don't expect that behavior from foreigners, especially outside of China. Just continue as you feel comfortable with.

Chopsticks aren’t necessary. And everything has to be pre cut into chopstick sized bites before cooking, which isn’t really American style cooking. Guarantee they know how to use a fork and knife.

Just make sure there’s enough that you’ll have leftovers. Maybe also get some laoganma chili crisp as a condiment in case they want it - american food is intensely bland for Chinese palettes. They’ll definitely appreciate steak and seafood.
weaverlorelei
I have a feeling that you are generalizing a perspective on "American" food. I fermented hot pepper sauce for the last couple of yrs, grown in my garden. It makes the hottest Thai Food look watered down by comparison. Certainly it isn't for everyone and doesn't reflect whatever is labeled "American " but hot/spicy foods are absolutely loved by a whole group here. Last a read, current hottest pepper is Pepper X, bred by an E. Coast pepper-head.
Sharp-Asparagus3380
Definitely generalising. And i’m not just talking about spiciness - just variety or flavor, texture, colors in general is always disappointing for Chinese people traveling to western countries. I guarantee they will find some things they really enjoy but will generally find the local food while they’re there quite boring.
Shiranui42
Make what you are comfortable with, showcase American culture to them. Serve it family style, and make sure there are options, meat, veggies and carbs. Serve the eldest/most senior first. Make sure there is more than enough food, abundance is a sign of being generous and welcoming. For your own consideration, you might want to make something that reheats well, because there should be leftovers. They will likely want hot water or hot tea (no sugar).

They may welcome whatever you serve with grace. But.. most nice Chinese meals have several dishes, they don’t really understand eating 16oz of steak. A few oz of steak with several other nice dishes makes sense to them. I agree salads are not something they usually enjoy. Same with cheese in general. Huge pasta dishes usually don’t appeal either.

I'm not Chinese but I live in China and my family hosted a Chinese student several years ago. I'd recommend having white rice available as part of your meal. Cook whatever else you're planning on making but also have a large bowl of white rice so your guests can help themselves as needed. Also, have some fresh fruit as a dessert option.

But the rice has gotta be cooked correctly or else they’re gonna think… what is this garbage? And then it’s gotta be the right kind of sticky glutinous rice, washed and cooked in a rice cooker. Boiling some instant rice is gonna be met with disgust.
OP- Honestly I’d say forego trying to adapt and give them a taste of good ole American home cooking and culture and hospitality. If you try to ‘make it more Chinese’ you’re gonna do it poorly and they’ll think you’re pandering idiots. Do what you know and do it well. The western food in China is largely shite imitations, just like American Chinese food. Give them a good ole grilled steak potato and veg. Some authentic smoked bbq. Whatever the special regional cuisine of your state is. Let them see what American culture is like. That being said, if the rule in your house is to take off shoes, they’ll want some slippers to wear.

A bit tricky I suggest family style meal with plain rice (get a cheap rice cooker) get jasmine rice not basmati rice.
Include 1 whole fish dish with head and tail, prawns or shrimp are good to include, 1 chicken dish can be a soup, stir fried veggies or mushrooms, pork or beef braised or stir fried, light desert cut chilled fruit is good. Have some chili crisps or fresh cut red chili in vinegar or soy sauce good too.
