Because the danger to their tankers was caused by the US attacking Iran, not Iran attacking the US. It’s China saying, “You created this mess, you clean it up.”
You can have whatever opinion you want about who the good guys and bad guys are in this issue. The simple fact of the matter was that the side that started shooting first, vice talking it out, was the US. We are what turned this into a war - for good reason or bad reason.

To help push Iran toward a viable trade to abandon its nuclear ambitions?

Why would China defend Iran? Does it care what government sells them oil?

I think that Iran is allowing oil tankers from China and Russia to pass through the strait. On the other hand, I have a feeling Trump will try to confiscate their tankers, following the approach he used in Venezuela. That's my guess. If Trump decides to bomb the tankers, imagine the environmental impact.
