Kusaya has a unique strong smell and is often perceived as "smelly." The smell comes from organic acids such as butyric acid and valeric acid produced by microorganisms in the process of making fish by soaking them in a fermented seasoning called kusaya liquid. As a fermented food, the smell is unavoidable, but there are ways to control the strong smell when grilling, such as grilling in a well-ventilated place, using a ventilation fan, wrapping in aluminum foil, or filling a grill dish with water.
