I loved a lot of dishes with fresh veggies and some meat or fish. Sometimes I feared the sauces were a bit heavy but I felt energetic and even lost weight, despite having the feeling I ate lots!

Maybe western Chinese food isnt as healthy as the food in China. Particularly in canton where the main requirement for food is that its fresh.
Unless theres loads of oil and sugar, i think the average food is very healthy - even the big banquet style like fish, its fresh fish and shallots and soy etc.
But i was there so long, i got used to a local breakfast food such as steamed sweet potato, soy milk (never Chang Fen).
I also ate Lanzhou Lamien often. Handmade noodles, lots of vegetables, minimal beef...
I returned to Australia and my family eat a lot of frozen foods, and great beef etc but covered in thick stodgy packet sauces. Difficult to and dont really want to adjust back to eating these foods.

I just returned from Yunnan, and I had a ton of really amazing healthy dishes.
Almost every restaurant offered free, or very cheap vegetables with the meal. All the veggies were fresh, steamed sautéed or raw, and all delicious.
The wild mushroom hotpot was amazing, no added oils but they did toss in a lot of chicken with the skin on so it had a lot of chicken fat in the broth, but otherwise it was all fresh mushrooms and vegetables. This was my favorite healthy dish.
I also had some regular chicken soup, with all kinds of vegetables, veggie congee, fresh vegetable steamed buns, dumplings with fresh ingredients…
Man I miss the food there, fresh fruit way super affordable and available on every street corner. Fruit here is extremely expensive by comparison, and no restaurants give away free vegetables and many don’t even have vegetables that aren’t deep fried or just a salad (which I love salad too but variety is nice)

I totally agree with this. Just came back from a trip to Yunnan. It is currently the wild mushroom season. Mushroom hotpot is available in so many restaurants there. Very flavorful and healthy, other than the chicken or pork fat in the broth. Steamed vegetable dishes are fresh, tasty and very affordable. Very wide variety of fresh fruits available for a very reasonable price

Can you please tell me, what would be the average ingredients for vegetable congee and is it readily available in Shanghai and Beijing? I presume it is predominantly a breakfast food?
I love congee and when we travel there intend to have it regularly but for my dad with food allergies for onion and garlic, I’m wondering if most congee, particularly savoury congee, has a stock base. Most stocks (unless made in the traditional way with spices in whole or in a bag and then strained out) contain stock powder which always has garlic and onion so that wouldn’t be suitable for my dad, but if it doesn’t have that I know he would love it.
If savoury congee almost always has stock I might look for a sweet or fruit version - is that a thing?

The healthiest would be some salad I had in North, like in Beijing. Also had something they called Tiger Salad.
Other than that I wouldn't really call Chinese food healthy. Lots of questionably oils, deep frying, contamination, food hygiene issues.
My typical fast food would be some variation of 兰州拉面, or 冷皮 or 面. Sometimes I go to the 'buffet' places where you fill your own plate and then pay by weight.

Coca-cola, McDonald's and Nestle are the faces of these comfort food "nonsense" worldwide. It's just a recognisable term. And they are driven by nostalgia which may be perceived as childish.

Vegetable congee, steamed fish and stir-fried bok choy are Cantonese-style. So Southern style dishes. The best type of that food is in Hong Kong.
When I go to mainland China, especially north or west, I find the food too oily.

the dishes you mentioned sound very cantonese to me. but i wouldn't be surprised if other parts of the country have these dishes.
i am a guangdong native and was told many times that our cuisine is too light, which is true, when compared to the food in other parts of China and Asia. i also have the impression that food in Shanghai is rather light.
Food in the northeast is heart warming. a bit too oily, a bit too salty, but the simplicity of the dish makes it kind of light.
Food in Sichuan is heavy. think of loads of chilli, spices, herbs, oil, and most importantly, full of aroma of tempered spices.
the food is authentic. no worry about this. just go for any place that is busy -- it is always a good sign!
last, in every cuisine, there are always items that are healthy and that are unhealthy. if you are health conscious, just be sextive. this shall work anywhere.

Healthy doesn't really apply to Chinese food. If you make everything yourself, sure, have tofu, and peanuts, and veggie. But if it is cooked for you it will have lots of oil, salt, spices, MSG, all of questionable origin...

Overall, if you use the “Eat food, mostly plants, and not too much” model from Michael Palin’s Omnivore’s Dilemma, you will be fine.
The amount of fresh fruit and veg in the diet is a magnitude higher than the USA. Yes, they do use some MSG, but they have NO HFCS etc. it’s all cooked fresh. Every restaurant that you visit has a health score posted on the wall. The smaller shops you can literally see right into the kitchen…
I’ve eaten street food there for the past 30 years or so, and not had trouble.
Use common sense and you will be fine.

It's actually not that healthy unless you're lucky enough to get home cooking where they lay off the oil a bit. If you eat standard street-side cheap restaurant food for a while you'll start getting oily and spotty skin. Some steamed xiao long bao dumplings in Shanghai are alrite

Hotpot can be pretty healthy if you pick a lighter dipping sauce and order plenty of veggies to go with your meat.
A lot of Chinese dishes can either be healthy or oily depending on how you cook it. My grandma's stir fry dishes and soup dishes seem healthy. I feel light and energised after eating it and lose weight when I stay at her place for months. But when I order the same dishes outside it's always too oily and/or coated with a lot of sweet/savoury sauce

One of my favorite types of food in China is hot pot, because its completely customizable. When I need a proper detox, I use a mushroom or bone broth as my base and include primarily leafy veggies, fresh mushrooms, frozen tofu, and maybe some vermicelli for a very comforting and revitalizing meal. On the other hand, I'm also a huge fan of Sichuan hot pot with spicy broth from dried peppers and numbing peppercorns, and I toss in lamb/fatty beef/fish/calamari/shrimp, plus lots of veggies as noodles as well. Dipping sauce is also typically DIY so you can adjust how heavy or light you'd like it to be.
My most memorable hot pot experience is fish hot pot (broth made from stewed fish bones and Chinese herbal medicine) at Beijing's Yuzhangmen after a snowy climb up the Great Wall. It was an incredibly nourishing (and healthy) meal, and I try to return whenever I'm in town during the colder seasons.

Pork neck bone soup. There's also Chinese cold veggie dishes that are basically blanched veggies tossed in garlic, soy sauce, sesame oil, and vinegar. Super tasty and healthy.

Nah, Chinese food is way more healthy than American food. Lots of vegetable dishes, steamed dishes, and even cold salads. Some dishes are heavy and oily, yes, but most Chinese people don't generally actually like, say, too much oil or very thick sauces in their stir fries.
The only place that makes stir fries with extremely thick sauces a la Chinese American food is, like, school cafeterias.
