If a 5-star hotel is anything like any of other restaurants I’ve worked at, the remaining food is either too old and thrown away, or the employees get to eat it. I wouldn’t be surprised if some larger places have deals with homeless shelters or something like that.

In my experience (4 star restaurant) anything that's been out is tossed - it's usually not safe to package and re-serve. If it's something that can be easily repurposed (containers of house-made tomato sauce will be fine tomorrow, for instance), it gets packed, stored in the walk-in and noted down so less gets made for tomorrow, and so it gets used first. Anything truly perishable? In Toronto, where I worked, we were a supply partner with Second Harvest - as the kitchen closed down for the night, perishables were loaded onto rolling racks, and any hotel trays were checked for our label. 45 min after end of service, just as cleaning started, a Second Harvest truck pulled up, the guys (or gals) brought us our old racks and trays, and took the new ones. We waved, filled up their coffee mugs and went back to work. They took the food to their central hub, figured out what the night's haul from all their stops was and made sure that it was distributed to their distribution partners - more than 225 social agencies. Food banks, shelters, community centres, soup kitchens, even after-school programs.

I worked at the Marriott Griffin Gate Resort in Lexington, Kentucky, in the 1990’s. At the time, it was the most expensive hotel in the state and I worked as a banquet server. We served corporate events, lavish weddings, derby parties and so on. The food was excellent and there was always far more than was needed.

In asian countries, food wastage is considered criminal when people starve. The buffet left over food is partially consumed by the hotel own staff, some things are stored for recycling (depending upon the item being storable), some of it also go to orphanages or rural schools (poor student schools).

As a student at the University of Hawaii around 1980, we quickly discovered that the whole idea behind a fabulous tropical buffet, was that it was supposed to be very impressive to hotel guests. That meant that from the moment it opened at 10, until the moment it closed at 2, it had to look fantastic. So if it was a quarter of 2 and the bacon platter was getting low, they would refill it. As long as the buffet was open, everything was stalked full. So when the buffet closed at 2, it was fully stocked and locals could come in and eat for free, as long as they looked and behaved like a guest. The hotel was going to dump all the food afterward and it was a quick way to get rid of it. The rule was you could not enter until after 2 and that included, not hanging around the entrance waiting. The buffet was usually cleared by 2:15.

I have seen in many five star hotels in Hyderabad and other cities in the two Telugu states of India that they open late night buffets to the consumers after 11.30 pm offering the food at half of the price. It is surprising to know that there would be a large number of people waiting to devour the five star food delicacies at the half the price though it is a bit late.

Although it was a 4.5 star hotel, I suspect the experience was not that different from a 5 star. The hotel I worked with had a staff canteen in the basement. Left over food from the guest dinner buffet was transferred to the staff canteen for those who were working the evening/overnight shift. Sometimes there was a lot, sometimes there was none and we defaulted back to the usual staff fare. It certainly wasn’t wasted and was handled carefully to make sure there weren’t any good hygiene risks.

I heard about Dubai that it is a law that after a whole day of keeping food, the restaurants are supposed to dispose of the food that is left at the end of that day, and normally it is sent to the labor camps at night time. A buffet has two classes of food. Still in the kitchen (hot or cold) and out on the buffet (hot or cold).

At the end of the event or meal service there is not much in the steam and cold trays to discard and it is obvious that it needs to be tossed. A five-star catered event will not have a lot of waste and again I find a buffet at a 5-star event “odd” as a concept.
