It means the Oil plus additives is cheap and can fry stuff at high temperatures without the fats breaking down and causing the product to smell bad
Industrial Refined Palm Oil used to fry stuff like Kurkure or Commercial Palm Oil used to fry samosas has a smoking point of 242 degrees Celsius against Sunflower Oil that has 220 Degrees Celsius
Plus it has the maximum usability factor
This means you can fry almost 7 Kilograms in Palm Oil versus maybe 2.5–3.5 Kilograms of Sunflower Oil or AG Rapeseed Oil
So that's half your cost right there

KFC and McDonalds in India now use Rape + Canola Oil for Frying instead of Palm while even Haldirams which exports a lot of food uses Sunflower + Canola mix to fry their snacks instead of Palm
They can absorb the higher margins
Sadly the local samosa wala can't
He can fry 200 Crisp Good Samosas in One Vessel of Palm Oil versus maybe 80–120 Samosas in One Vessel of Sunflower Oil before the Oil simply starts to ensure the fried product tastes bad
The Samosas would cost ₹40/- instead of ₹20/- for him to maintain the same margins which are already not very high
Likewise the Vada Seller in Railway Platforms finds it easier to Re Fry Unsold Vadas and sell them again with Palm Oil
Near Impossible to do so with Sunflower Oil or Canola Oil plus of course the high cost
Sadly India is a net importer of Oils today
Thus we can't reduce the price of Canola or Sunflower to lower levels to ensure easier margins for the smaller food salesmen
It is estimated that if we had Russia level of Sunflower oil, we could sell 1 Litre for ₹ 48/- retail and still make 30% Profit instead of ₹120/- a litre
