This is a horror scenario.
It would be a brutal blood bath for a period while determining dominance. But humans would almost certainly come out on top, because humans have a lot of advantages besides just intelligence that people fail to realize, forget about or discount. Humans are a Great Ape and the greatest threats would come from the other Great Apes. But humans have significantly better fine dexterity, are better able to make and wield tools, are more adaptable to very different environments, have better endurance and capacity for travelling long distances, etc.
Virtually naked humans have taken down lions, elephants, bison, gorillas, rhinos, etc. by using weapons and pack tactics. Let humans put on some heavy armor while wielding medi weaponry and they are a lot scarier. Give them modern weaponry and they are scarier yet. Gorillas could not handle heavy armor, because it would rapidly overheat them. Humans are good at shedding their heat, way better than gorillas.
(Edit: As I have thought about this more from responding to comments, it should be noted that Humans would get into wars with each other, as would members of the same species of other animals fighting among themselves. But, while I can see Humans enslaving Human level intelligent animals in this, they might also very likely make treaties with rights for animals, make alliances, and would likely become Vegan as part of the bargaining.)
If we go a century or two into the future, this will turn into a good scenario. This is because we are inside the technological singularity and within 50 to 200 years we will begin evolving into a race of pure minds who will use custom-designed cybernetic bodies like we do clothing and accessories. Once we have this technology, all self-aware animals can be rapidly evolved into becoming full equal members of that civilization of pure minds and they will be able to wear whatever body they want, well, that does not already belong to someone else.
I’m not sure about the horror show, although there certainly would be a period of adjustment.
Surely if every animal was given the intelligence of humans, we’d suddenly be negotiating with them rather than killing them and eating them or going to war with them? (“Why am I locked in a zoo, I have things to do”)
The first thing that might happen is a lot of people would starve as we tried to adjust to a plant based diet as a vast number of people would have an issue eating sentient creatures (far more than they do now). Meat would actually be murder in this case. Farming practices would change, diets would change, land use would change.
There would always be a few that wanted to do nothing but fight, as there are humans. But the food chain would be a bigger issue not just for us, but for all those wild animals that suddenly felt empathy for their prey.
Ants.Specifically, fire ants.
That’s not specific enough because there are a couple hundred different species of them, but they’ll gang up on humans (as the biggest existential threat to the entire biosphere) before settling things amongst themselves.
Humans may have a large starting advantage through current control of most technology, but to ensure continued dominance against ants (and other small things, like spiders) the only option is total destruction of Earth’s biosphere.
There are a lot of species that would probably be willing to coexist with humans if they had human intelligence, but ants (and a lot of other bugs) would make extermination of humans a primary obxtive out of rational concern for their own safety.

After that, the remaining humans will be desperately trying to kill all insects (and most other animals) and the logical response is extermination of all humans, then all mammals, and probably nearly all chordates. The big advantage of chordates that pays for their metabolic expenses is that they are smarter than other animals, but if all animals have human intelligence without needing to be humans or even chordates, then chordates lose.
Actually, it would probably still be humans.
First of all, tool use is, to borrow a term, game-breaking. Animals without body shapes that allow them to make and use tools effectively will not be able to dominate the planet the way humans do. As smart as dolphins are, for example, they aren’t going to be able to make something like a spear. If we’re talking about complex toolmaking, such as flint knapping or tying a rock to a stick to use it as a hammer, there aren’t that many animals that can pull it off. There’s primates, elephants, birds, octopi, and I think that’s pretty much it. Insects might be able to do some stuff by massing together, but I don’t know how much.
Second, fire is OP because it lets you do things like harden wood, smelt metals, and just burn the hell out of stuff. That puts octopi out of the running: they’re pretty much limited to smacking coral and clam shells together because they live underwater. Octopi’s short lifespan will also work heavily against them. Insects are also kind of screwed: the square cube law means it will be very difficult to get a fire going, get it hot enough to melt metal, etc.
Now to elephants. They have strength on their side, but they only have one trunk as opposed to two hands, which will make some things less efficient. In addition, their sheer size limits population densities (which will make division of labor harder), and their diet of nutrition-poor plant matter means they have to spend a huge amount of time eating. Even with agriculture, this could limit their ability to dedicate time to inventing better tools. Other limitations of elephants include that they can’t climb very well, and their weight would make something like building a boat require much more resources. Humans can build a dugout canoe out of a single tree trunk and cross oceans with it. Elephants can’t.
Birds? They might pull it off: flight is a pretty big advantage. On the other hand, the bird species that have the dexterity to use tools aren’t all that strong. For example, I’m not sure how a raven would swing an axe with enough force to chop down a tree.
Other species could certain develop a civilization if they had similar intelligence to humans, but we have a combination of size, dexterity, omnivorous diet, and biomechanics which make it so that while some animals might be better at us at surviving in some environments, we can do an okay job pretty much anywhere.
Most species would die.
Humans have weird intelligence compared to other species. Our power lies in our ability to:
(1) Use our big brains to make tools. Tools are really hard to make and wield for most body types. If you woke up as a hoofed animal tomorrow, you would likely have trouble even turning the doorknob to leave your bedroom.
(2) Transmit knowledge via language and culture. Feral humans - i.e. humans with the same intelligence as anyone else but left without culture and language - are not highly functioning.
Most species would be toast without complex, hard-wired behaviors via instincts. Giving them the intelligence of a human - which includes our incredible flexibility due to our lack of instincts - and most would die. Maybe the ragged survivors would invent language and figure out how to use hooves and claws and wings to make tools and use their language to transmit knowledge to their offspring. Maybe.
Quite a nightmare scenario.
When most people use the term animals, they tend to limit their thinking to mammals, and forget about sponges, jellyfish, flatworms, roundworms, earthworms, insects, spiders, crustaceans, squids, starfish, fish, amphibians, reptiles, and birds.
You might also want to consider numbers, and importance in the food web.
Now if they are going to act like humans, and have ambitions of ruling the world, then we are not going to fare well. The biosphere can do just fine without us, but there are other species, eg. ants, that it relies on. If one or two insect groups decide that we need to be eliminated, then there isn’t much we could do about it. Flies could contaminate all our food with pathogens, wasps or mosquitoes could hunt us down in great numbers either killing us directly or by disease, other insects could take out our food supplies, and still others could sacrifice themselves to neutralize our technology, eg. cover radiators to overheat vehicles. I haven’t even considered what the microscopic animals that live on and in us could do if they wanted to harm us.
My guess is some members of the Arthropods, simply because of pure numbers. However something lower and more crucial on the food chain could also take over by simply by shutting the food chain down, eg. if plankton made themselves unavailable as a food source.
Unfortunately, i think Ants is going to rule the world.
To think human will continue ruling the world would be silly.
Food source
Your chicken, your fish, your cows etc are all smart now. They are not going to behave in such “peaceful” manner. They will retaliate and attack humans if they know and they will know we are going to eat them. They will not just gather around peacefully and will try to escape any confinement.
Fish will not swim at “dangerous” spots. They will not bite the baits any more. They might even figure out how to cut those nets that fisherman use to catch them, perhaps with the help of their friends such as crabs or lobsters, with their claws.
Your food source will most likely be mostly be plant based at this point.
All these aside, even at our current intelligent level, wiping out ants just from your house is very very tough. Not only they grow resistance to your poisonous bait, they breed fast too.
Once they have our intelligence, they will avoid those poison baits that you laid out. They will avoid dangerous spots and with their “hive mind”, they will work as a team, much better than humans.
Unless you sleep in a airtight place, ants can get in. They will get in underneath your door, through your ventilation. Any small holes, they will be able to get in.
Once in, they will just go through your nose and start chewing all the flesh they could.
You cannot defend against this.
There’s too much of them and they’re too small to be dealt with efficiently and they’re everywhere literally and hiding underground is so effective you can’t kill them without causing environment damage that affects you as well.
