My wife is from China and lived in America for many years. She always claims pork in America has a different taste that she doesn't like too much compared to project in China. I wonder if it's just a nostalgia thing. I'm a vegetarian so I don't eat it so I'm looking for others opinions. Is she crazy? :)

It may be the oil she cooks it in.
That being said meat does taste differently according to location. What the animal eats and how it is raised reflects on taste.
KFC China tastes more like chicken than Canadian KFC.
She also just may like complaining. I'm married to a Chinese woman too.

Australian married to Chinese here. My wife says the same about Australian pork.
Apparently it's because supermarkets in Australia sell male and female pork meat as the same. Apparently male pork smells, and this is likely the reason your SO says this.

Yes this is a known issue and she is not crazy. The reason is very likely that US pork was injected with some sort of liquid (usually a salty solution) right after butchering. The solution to this problem is to buy pork from Costco, they sell a brand called "Swift Premium" and those were not injected. It tastes the same as pork in China, confirmed multiple times.

The liquid injection is considered a sort of enhancement, but there is no nationwide standard by USDA what solution should be used. US is the only country that I know do this at large scale.

I asked my local butcher, they say the pork was injected before they receive them, so there is no way to undo it. I really do not know why they do the injection, maybe for flavor? Chinese people are sensitive to this difference for some reason.

Yeah that makes sense. I just read an article stating 90% of US pork is injected with this saline solution to plump up the meat, as US animals are very thin. I've always bought the best/organic stuff for her, but time and again she always "tastes" that flavor...except with costco ribs. I think this makes sense...but now the next question was to try and figure where else to buy this company's products...other cuts of meat.

Its not the breed of the pigs, because the pork in China comes from the same breed of pigs that they use in the US. In the 1980s, they introduced Western breeds in China, and now nearly all the pork in China comes from these breeds.

One factor is the breed of pork. Black pig (common in Asia) tends to have more fat than white pig (common in Europe). I don't know what kind of pig breed is common in US, but it might contribute to the taste difference.

Not sure about pork but I know for sure this is true for beef. Like, beef in China just plain sucks. Don't do that to yourself if you eat beef.

The pigs in China are full of drugs. There have been 4-5 scandals the past 5 years. There is even a directive for foreign teams to avoid pork and beef when here because there have been instances in the apst where individuals tested positive for steroids due to the meat they ate.

Actually that is a common misconception. US does not allow hormone used in raising pig and chicken, because they do not have to. The newest breeds of animals grow very fast and no growth hormone is needed. That applies to all modern operations in all countries.

I haven't found any meat in China that I like. It's several things. What they feed the animals, living conditions and how their butcher the meat.
