All kinds of things. For reference, I’ll point out the most common stereotypes of the country I come from, and discuss them afterwards.
1.Chinese are hard-workers and cannot relax
2.Chinese are cold and socially introverts.
3.Chinese are atheists.
4.Chinese are communists.
5.Chinese eat everything.
6.Chinese are either dirt poor or super rich
7.Chinese have no worker rights.
8.Chinese have no human rights.
9.Chinese can live well under a dictatorship because they are disciplined.
10.Chinese are good at scientific subjects, but not in creative subjects

1.There are hardworking Chinese as well as lazy Chinese. It is true that their culture considers hard-work as an important value. But it is not something that prevents them from enjoying a holiday or some break. Perhaps it is the opposite. Chinese can sure party hard!
2.This also dismantles the idea of all Chinese being introverts. It is quite the opposite, but many of their affection displays are not understood by a foreigner. That’s because a Chinese will prefer to bring you some fresh fruit and ask you to take care of yourself more than giving you a hug.
3.Furthermore, Chinese are among the most religious people you can find. Superstition, especially based on words bringing good or bad luck, is present, as well as animist practices. These are very interesting, for me more than more organized religions such as Buddhism or islam, and influence practically everybody’s own life.
4.Not all Chinese are communists. Heck, not all communist party members may be fervent communists, either. China is a socialist state, after all. The political views within the government differ, as Chinese government believes that only through confrontation of different perspectives it is possible to progress. But, of course, all of them understand what communism, socialism and class struggle are.

6.It is true that many Chinese who travel to the West are rich or well-off and that many of those who open a business in the West are much poorer. Most of the rest, though, prefer to use the holiday to go back home to visit the parents, since they often live very far from each other due to internal migration. Family is extremely important in Chinese society and there is literally a mass migration every long holiday from the cities to the countryside.
7.Chinese worker rights are pretty much great, especially for a developing country. To be honest I did not see differences between my contract under an Italian company and the one under a Chinese company.
While it is true that some businessmen abuse their workers’ own rights, once they get caught they are going to face harsh punishment.
5、中国的饮食文化非常广泛,但远非什么吃地球上所有的生物。中国人自己也拿它开玩笑,但同时有很多人在听到外国人说中国人都吃狗肉时会感到羞耻。吃狗肉确实发生在中国的一个地区,并成为对整个国家最大的刻板印象之一。中国有不同的美食,虽然有些使用特定的动物,包括昆虫,但绝大多数在成分上与西方美食更相似(尽管它们的烹饪方式非常不同)。

In the West we are used to think Chinese are practically slaves of the system. But that’s very far from reality. Actually it’s more like the opposite. The system needs to work well, otherwise Chinese won’t let it exist. Every single government in China was changed because of people’s own opinion, and not because of foreign pressure or invasions, with only one exception for the Yuan dynasty.
9.“Chinese can do well under a dictatorship because they are disciplined” is the most funny thing you can tell somebody who actually has been to China. In many big cities the traffic police is ignored (especially by bicycle drivers) in a so blatant way that I truly feel sorry for them. One thing that Chinese government had to figure out to let people follow the rules is to point out the consequences of wrong behavior. For example, “Get in a fight, and whether you win or lose, you’ll still end up in the hospital”. These communication methods show clearly about how “disciplined” Chinese are. I also specify that only in some cultures it is enough to say “Don’t do this” to convince people. In Italy we have the same problem, so I can relate :)
10.It’s a plain stereotype that there are no Chinese artists. Their music business is thriving. They have their own cartoons besides foreign ones. They produced marvelous pieces of art in the entire history of China and still do. Perhaps it should be reformulated as “There are not many Chinese artists recognized at an international level”, but that is a completely different story.
8、人权——对许多人来说,这是一个难以破解的难题。

It depends on how much exposure they've had to China and Chinese people.
For myself, I find that most of the Chinese people I meet are very intelligent, curious, earnest in their studies and life pursuits, and eager to ask question and teach others about their culture.
I also find they do NOT suffer fools lightly, and are not given to blind trust and obsequious over-politeness. I made this observation after living in Japan, where the inverse is generally true, and then going to China. Huge culture shock.
I find they are very straightforward, very honest, they do not mince words, and they will tell you their opinion. I personally find this refreshing and value this quality in my friendships, but not all people do.
But what does the average westerner think?
When I told my friends I wanted to live in China with my wife, they strongly obxted. Their reason?
"But they're communists!"
So yeah, it is really just a matter of exposure, and as it stands, the only exposure most white bread suburban Americans get from China can fit on the slip of paper inside of a fortune cookie.

I am not Chinese. But here is my impression:
Chinese people become frustrated when Westerners come to Whitesplain to them about the values of Western style liberal democracy, considering the fact that China is a 5000 year old rich culture. My impression is that they see some members of the media, people like Trump, and others who believe that Western culture is “superior” to Eastern culture are indeed naive. The reason is because if they understood the good things about Chinese culture they wouldn’t so readily try to change Chinese culture. This gives some Westerners a kind of tone deafness that makes dialogue difficult. Because you have to come at someone with a certain level of openness to make meaningful dialogue.
Some Westerners are also naive to believe that they can attack another country and force Western style democracy on the people and they will appreciate it. This was tried in Iraq and it was a disaster. Neoconservatives are naive. They lack an appreciation for the nuances and complexities of other cultures and people. It also displays a level of moral self-righteousness and paternalism.
